Basil Pesto

Ingredients
  1. 1 or 2 garlic cloves
  2. 1/2 teaspoon salt
  3. 3 tablespoons pine nuts
  4. 3 cups loosely packed basil leaves
  5. 1/2 cup extra virgin Tarago Olive Oil
  6. 1/2 cup freshly grated Parmesan cheese
Instructions
  1. Finely chop and blend garlic, salt and pine nuts.
  2. Add basil and olive oil; puree until smooth.
  3. Combine with the cheese.
  4. Serve with pasta or grilled meats or vegetables.

Fettunta - Tuscan Garlic Bead

  1. Old Bread
  2. Fresh Garlic Cloves
  3. Tarago Olive Oil
Instructions
  1. Slice and toast old bread over an open flame. Rub it with fresh garlic - the toast will act as a grater. Season with salt. Drizzle freshly pressed Tarago Olive Oil over it.

Rustic Bruschetta

  2. Toast
  3. Fresh Tomatoes
  4. Tarago Olive Extra Virgin Olive Oil
  5. Basil Leaves
  6. Cheese
Instructions
  1. Spread Tarago Black Olive Paste on toast or bruschetta, then add slices of tomatoes, a splash of EVOO, garlic, a couple of torn basil leaves and cheese.

Biscuits à l'huile d'olive – Tarago Olive Oil cookies

Ingredients
  1. 7 eggs
  2. 2 cups of sugar
  3. Zest and juice of 2 lemons
  4. ¼ cup of milk
  5. 7 ounces of cold butter
  6. 1 ¼ cup of Tarago Olive Oil
  7. 2 cups of flour
  8. 2 teaspoons of baking powder
First Step
  1. Grease your cookie mold so the batter won't stick.
  2. Heat the oven to 350 degrees
  3. Beat 7 eggs with 2 cups of sugar
  4. Add and beat zest and juice of 2 lemons and ¼ cup of milk
Second step
  1. In a larger, second bowl, beat together the cold butter, olive oil, flour & baking powder.
  2. Combine all ingredients together in the larger bowl.
  3. Pour into prepared cookie molds. Bake approximately 10 minutes at 350 degrees.
  4. Serve as is, or with cream and fresh fruit, chocolate, ice cream, etc.

Green Olive Sauce

Ingredients
  1. 1½ cups green Tarago olives
  2. 2/3 cup Tarago Olive Oil
  3. ½ cup minced parsley
  4. 1 sweet red bell pepper, seeded and finely chopped
  5. 1 teaspoon black pepper
  6. 1½ ounces anchovy fillets, drained and mashed with a fork
  7. ¼ cup capers
  8. 1 tablespoon garlic, finely chopped
  9. 1 tablespoon fresh oregano, finely chopped
Instructions
  1. Chop olives coarsely and combine with all ingredients. Stir to blend. Cover and refrigerate for at least 12 hours. Serve at room temperature.

Spaghetti Alla Tarago Olives

  1. Ricotta Cheese
  2. 2 Tablespoons of cream
  3. 1 cup of Milk
  4. Tarago Black Olive Paste
  5. Spaghetti
  6. 2 cloves of garlic
Instructions
  1. Mix a cup of ricotta cheese, 2 tablespoons of cream (or two cubes of marinated soft goat cheese) with one cup of milk. Mix well and heat until it just boils, then add two tablespoons of Tarago Black Olive Paste.
  2. Cook and drain spaghetti - lightly fry 2 cloves of finely chopped garlic. Combine the sauce and the spaghetti and enjoy.

  2. Alternatively mix the paste with one of the following before mixing with eggs: garlic finely chopped, tomato without its juice finely diced, parsley, mint.
